Any winning combinations you have need to appear on an enabled payline to pay out. You can determine how many paylines will be enabled, through the control with the blue "Lines' button at the bottom of the interface.

Scatter symbol payouts wil only happen of they appear from left to right on the reels. In the event five Bourbon Street symbols appear (meaning they occupy all five reels) there is a multiplier of 50x the number of coins wagered. The payout is better with the Jester scatter, which produces a 100x multiplier.
